1 ½ lbs russet or Yukon Gold potatoes, diced
1 lb boneless skinless chicken breast or thighs, cubed
2 cups broccoli florets
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
Salt and black pepper, to taste
½ cup sour cream or Greek yogurt
1 cup shredded cheddar cheese
Sliced green onions, for garnish (optional)
Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch dish.
Toss potatoes and chicken with oil and seasonings. Spread in the dish.
Bake for 30 minutes, stirring once halfway through.
Add broccoli and bake an additional 15 minutes.
Stir in sour cream or yogurt. Top with cheese and return to oven for 5–7 minutes to melt.
