  • 1 ½ lbs russet or Yukon Gold potatoes, diced

  • 1 lb boneless skinless chicken breast or thighs, cubed

  • 2 cups broccoli florets

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp paprika

  • Salt and black pepper, to taste

  • ½ cup sour cream or Greek yogurt

  • 1 cup shredded cheddar cheese

  • Sliced green onions, for garnish (optional)

Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a 9×13-inch dish.

  • Toss potatoes and chicken with oil and seasonings. Spread in the dish.

  • Bake for 30 minutes, stirring once halfway through.

  • Add broccoli and bake an additional 15 minutes.

  • Stir in sour cream or yogurt. Top with cheese and return to oven for 5–7 minutes to melt.

  • Garnish with green onions if desired.
