Cheesy Ranch Potatoes and Smoked Sausage is a hearty, flavorful one-pan bake made with crispy potatoes, savory smoked sausage, and a melty cheddar cheese finish — perfect for any comfort food craving.

  • lbs Yukon Gold or red potatoes, diced

  • 12 oz smoked sausage, sliced into ¼-inch coins

  • 1 tbsp olive oil

  • 1 packet dry ranch seasoning

  • Salt and black pepper, to taste

  • 2 cups shredded sharp cheddar cheese

  • 2 tbsp chopped green onions or chives

  • Optional: ½ cup sour cream or 4 oz cream cheese

Instructions

  • Preheat oven to 400°F and grease a 9×13-inch baking dish or sheet pan.

  • In a large bowl, toss diced potatoes, sausage slices, olive oil, ranch seasoning, and salt and pepper.

  • Spread mixture in an even layer in the prepared pan. Roast for 30–35 minutes, stirring once halfway.

  • Remove from oven, top with shredded cheese, and return to oven for 5–7 minutes until melted and bubbly.

  • Garnish with green onions. Serve hot.

Notes

Add sour cream or cream cheese to the mix before baking for extra creaminess. Broil briefly for a golden cheese topping. Serve with salad or steamed greens.
