Cheesy Ranch Potatoes and Smoked Sausage is a hearty, flavorful one-pan bake made with crispy potatoes, savory smoked sausage, and a melty cheddar cheese finish — perfect for any comfort food craving.
1½ lbs Yukon Gold or red potatoes, diced
12 oz smoked sausage, sliced into ¼-inch coins
1 tbsp olive oil
1 packet dry ranch seasoning
Salt and black pepper, to taste
1½–2 cups shredded sharp cheddar cheese
2 tbsp chopped green onions or chives
Optional: ½ cup sour cream or 4 oz cream cheese
Preheat oven to 400°F and grease a 9×13-inch baking dish or sheet pan.
In a large bowl, toss diced potatoes, sausage slices, olive oil, ranch seasoning, and salt and pepper.
Spread mixture in an even layer in the prepared pan. Roast for 30–35 minutes, stirring once halfway.
Remove from oven, top with shredded cheese, and return to oven for 5–7 minutes until melted and bubbly.
Garnish with green onions. Serve hot.
