This easy one-pan dinner features crispy ranch-seasoned potatoes, smoky sausage, and melted cheddar cheese—perfect for busy weeknights or casual family dinners.

  • 2 lbs russet or Yukon gold potatoes, cubed

  • 14 oz smoked sausage, sliced into ½-inch rounds

  • 1 packet (1 oz) ranch seasoning mix

  • 23 tbsp olive oil

  • 1 ½ cups shredded cheddar cheese

  • 2 green onions, chopped (optional)

  • Sour cream, for serving (optional)

Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.

  • In a large bowl, toss cubed potatoes with olive oil and ranch seasoning. Spread onto baking dish in a single layer.

  • Roast for 25–30 minutes, stirring halfway, until starting to brown.

  • Add sliced smoked sausage over potatoes. Roast for another 15–20 minutes until sausage is browned and potatoes are tender.

  • Sprinkle cheese evenly over the hot mixture. Broil for 3–5 minutes until cheese is bubbly and golden.

  • Garnish with green onions and serve with sour cream if desired.
