This easy one-pan dinner features crispy ranch-seasoned potatoes, smoky sausage, and melted cheddar cheese—perfect for busy weeknights or casual family dinners.
2 lbs russet or Yukon gold potatoes, cubed
14 oz smoked sausage, sliced into ½-inch rounds
1 packet (1 oz) ranch seasoning mix
2–3 tbsp olive oil
1 ½ cups shredded cheddar cheese
2 green onions, chopped (optional)
Sour cream, for serving (optional)
Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
In a large bowl, toss cubed potatoes with olive oil and ranch seasoning. Spread onto baking dish in a single layer.
Roast for 25–30 minutes, stirring halfway, until starting to brown.
Add sliced smoked sausage over potatoes. Roast for another 15–20 minutes until sausage is browned and potatoes are tender.
Sprinkle cheese evenly over the hot mixture. Broil for 3–5 minutes until cheese is bubbly and golden.
Garnish with green onions and serve with sour cream if desired.
