1.5 lbs boneless, skinless chicken breast, cubed
1.5 lbs Yukon Gold potatoes, chopped
3 cups broccoli florets
3 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and black pepper, to taste
1 cup shredded cheddar cheese (optional)
Preheat oven to 400°F (200°C). Grease a large baking dish or sheet pan.
In a large bowl, combine chicken, potatoes, and broccoli. Toss with olive oil and seasonings.
Spread mixture evenly in the baking dish.
Bake for 25–30 minutes, stirring halfway.
Add cheese if using, and bake for another 8–10 minutes.
Let rest 5 minutes before serving.
