A creamy, one-pot dish made with savory chicken sausage, tender broccoli, and orzo pasta. Quick, hearty, and perfect for weeknight dinners or meal prep.
4 chicken sausages (pre-cooked), sliced
1 cup dry orzo pasta
2 1/2 cups low-sodium chicken broth
2 cups broccoli florets
1/2 onion, diced
2 cloves garlic, minced
1/4 cup grated Parmesan cheese
2 tbsp olive oil
Salt and pepper, to taste
Red pepper flakes (optional)
Juice of 1/2 lemon (optional)
Heat olive oil in a large skillet over medium heat. Add chicken sausage and cook until browned, about 4–5 minutes.
Add onion and cook until softened, 2–3 minutes. Stir in garlic and sauté for 30 seconds.
Stir in orzo and toast for 1–2 minutes.
Pour in chicken broth. Bring to a simmer, cover, and cook for 8 minutes, stirring occasionally.
Add broccoli and continue cooking for 4–5 minutes until orzo is tender.
Stir in Parmesan, adjust seasoning, and finish with lemon juice if using.
Serve hot with extra cheese or red pepper flakes.
Add extra broth if orzo becomes too dry.
Swap broccoli for spinach or kale.
Use spicy sausage for extra heat.
