Creamy garlic Parmesan orzo is a quick, one-pot pasta dinner full of cozy flavors. Tender orzo is simmered in broth and finished with garlic, cream, and cheese for the perfect weeknight comfort meal.
1 cup dry orzo
2 cloves garlic, minced
1 small shallot (or ½ yellow onion), finely diced
1 tbsp butter
1 tbsp olive oil
2½ cups chicken or vegetable broth (low-sodium)
¼ cup heavy cream
½ cup freshly grated Parmesan cheese
Salt and black pepper, to taste
Optional: baby spinach, lemon zest, fresh parsley
In a skillet, heat butter and olive oil over medium.
Add garlic and shallot; sauté 2–3 minutes.
Stir in orzo and toast for 1–2 minutes.
Pour in broth; simmer on low, partially covered, stirring often.
Cook 10–12 minutes, until orzo is tender and most liquid is absorbed.
Stir in cream and Parmesan. Season to taste.
Add spinach or lemon zest if using. Serve warm, garnished with herbs.
To reheat, add a splash of broth. Store in the fridge up to 3 days. Add shrimp, chicken, or veggies to customize.
