4 chicken apple sausages, sliced
2 medium sweet potatoes, peeled and cubed
1 lb Brussels sprouts, halved
1 red onion, sliced
2 apples (Honeycrisp or Granny Smith), thinly sliced
3 tbsp olive oil
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tbsp fresh rosemary or thyme, chopped
Preheat oven to 425°F (220°C).
In a large bowl, toss sweet potatoes, Brussels sprouts, onion, and apples with olive oil, garlic, salt, pepper, and herbs.
