  • 4 chicken apple sausages, sliced

  • 2 medium sweet potatoes, peeled and cubed

  • 1 lb Brussels sprouts, halved

  • 1 red onion, sliced

  • 2 apples (Honeycrisp or Granny Smith), thinly sliced

  • 3 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tbsp fresh rosemary or thyme, chopped

Instructions

  • Preheat oven to 425°F (220°C).

  • In a large bowl, toss sweet potatoes, Brussels sprouts, onion, and apples with olive oil, garlic, salt, pepper, and herbs.

  • Spread mixture on a parchment-lined baking sheet in a single layer.

  • Nestle sausage slices evenly among the vegetables.

  • Roast for 25–30 minutes, stirring once, until everything is golden and tender.

  • Remove from oven and sprinkle with extra herbs if desired. Serve warm.
