Easy One-Pan Balsamic Chicken Orzo with Vegetables

An easy one-pan dinner made with juicy balsamic-glazed chicken, tender orzo pasta, and colorful vegetables, all simmered together for a flavorful, family-friendly meal.

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs

  • 1 cup dry orzo pasta

  • 2 tbsp olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, chopped

  • 1/2 red onion, sliced

  • 1 cup cherry tomatoes

  • 3 cloves garlic, minced

  • 1/4 cup balsamic vinegar

  • 2 1/2 cups low-sodium chicken broth

  • 1 tsp Italian seasoning

  • Salt and black pepper to taste

  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Season chicken with salt, pepper, and half of the Italian seasoning.

  2. In a large skillet, heat 1 tbsp olive oil and sear chicken for 4–5 minutes per side. Remove and set aside.

  3. In the same pan, add another tbsp olive oil and sauté onion and peppers for 3–4 minutes.

  4. Add zucchini and cook 2–3 more minutes. Stir in garlic for 30 seconds.

  5. Pour in balsamic vinegar and scrape the pan to deglaze.

  6. Stir in orzo and toast for 1 minute. Add broth and remaining Italian seasoning.

  7. Simmer uncovered for 10–12 minutes, stirring often. Add tomatoes in the last 5 minutes.

  8. Return sliced chicken to the pan, cover, and let rest off heat for a few minutes.

  9. Garnish and serve warm.

Notes

  • Add feta, spinach, or olives for variation.

  • Store leftovers up to 4 days.

  • Reheat gently with a splash of broth.
