This Easy Oven-Roasted French Garlic Chicken is a rustic, flavorful dish made with tender chicken, whole garlic cloves, and fresh herbs—all roasted to golden perfection in one pan.

Ingredients

  • 4 bone-in, skin-on chicken thighs

  • 12 heads garlic, cloves separated but unpeeled

  • 2 tbsp olive oil

  • ½ cup dry white wine or chicken broth

  • 1 tsp fresh thyme (or ½ tsp dried)

  • 1 tsp fresh rosemary (or ½ tsp dried)

  • Salt and pepper to taste

  • Optional: lemon slices or juice, butter for finishing

Instructions

  • Preheat oven to 400°F (200°C).

  • Season chicken with salt, pepper, and herbs.

  • Optional: Sear chicken in olive oil on both sides. Remove.

  • Add garlic cloves to the pan. Pour in wine or broth to deglaze.

  • Return chicken to the pan. Scatter herbs on top.

  • Roast uncovered for 35–45 minutes, basting occasionally.

  • Optional: Finish with lemon juice or butter.

  • Let rest 5 minutes. Serve with bread, potatoes, or salad.
