This Easy Oven-Roasted French Garlic Chicken is a rustic, flavorful dish made with tender chicken, whole garlic cloves, and fresh herbs—all roasted to golden perfection in one pan.
4 bone-in, skin-on chicken thighs
1–2 heads garlic, cloves separated but unpeeled
2 tbsp olive oil
½ cup dry white wine or chicken broth
1 tsp fresh thyme (or ½ tsp dried)
1 tsp fresh rosemary (or ½ tsp dried)
Salt and pepper to taste
Optional: lemon slices or juice, butter for finishing
Preheat oven to 400°F (200°C).
Season chicken with salt, pepper, and herbs.
Optional: Sear chicken in olive oil on both sides. Remove.
Add garlic cloves to the pan. Pour in wine or broth to deglaze.
Return chicken to the pan. Scatter herbs on top.
Roast uncovered for 35–45 minutes, basting occasionally.
Optional: Finish with lemon juice or butter.
Let rest 5 minutes. Serve with bread, potatoes, or salad.
