  • 2 boneless, skinless chicken breasts (or 4 thighs)

  • Juice and zest of 1 lemon

  • 3 cloves garlic, minced

  • 3 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp Italian seasoning (optional)

Instructions

  • In a bowl or bag, combine lemon juice, zest, garlic, olive oil, salt, pepper, and Italian seasoning.

  • Add chicken and marinate for 30 minutes at room temp or up to 6 hours in the fridge.

  • Heat skillet over medium-high or preheat oven to 400°F (200°C).

  • Sear chicken 4–6 minutes per side (or bake 22–25 minutes), until internal temp reaches 165°F (74°C).

  • Optional: Add ¼ cup broth to the pan after cooking for a quick sauce.

  • Let rest 5 minutes before serving. Garnish with parsley or lemon slices.

Notes

  • For a creamy twist, add ¼ cup cream and 2 tbsp Parmesan to the pan after cooking.
