2 boneless, skinless chicken breasts (or 4 thighs)
Juice and zest of 1 lemon
3 cloves garlic, minced
3 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp Italian seasoning (optional)
In a bowl or bag, combine lemon juice, zest, garlic, olive oil, salt, pepper, and Italian seasoning.
Add chicken and marinate for 30 minutes at room temp or up to 6 hours in the fridge.
Heat skillet over medium-high or preheat oven to 400°F (200°C).
Sear chicken 4–6 minutes per side (or bake 22–25 minutes), until internal temp reaches 165°F (74°C).
Optional: Add ¼ cup broth to the pan after cooking for a quick sauce.
