A creamy, cheesy, one-pot skillet dinner that captures all the savory flavors of a cheeseburger — with tender orzo pasta, melty cheddar, and seasoned ground beef. Perfect for busy weeknights.
1 lb ground beef (85% lean)
1 small yellow onion, finely chopped
2 cloves garlic, minced
1 tbsp tomato paste
1 tsp Worcestershire sauce
1/2 tsp paprika
1/4 tsp mustard powder
Salt and pepper, to taste
1 cup dry orzo
2 1/4 cups beef broth
1/3 cup heavy cream or half-and-half
1 1/2 cups shredded sharp cheddar cheese, divided
Optional: 1 tbsp pickle juice or 1/4 cup chopped pickles
In a large skillet, heat a splash of oil over medium heat. Add onion and sauté until softened, about 4 minutes. Add garlic and cook for 30 seconds.
Add ground beef. Brown until cooked through, breaking up with a spoon.
Stir in tomato paste, Worcestershire sauce, paprika, mustard powder, salt, and pepper. Cook for 2 minutes.
Add orzo and beef broth. Bring to a boil, reduce heat, cover, and simmer for 10–12 minutes, stirring occasionally.
Stir in cream and half the cheese until melted and creamy.
Sprinkle remaining cheese on top. Cover and let sit for 2–3 minutes off heat.
Add optional pickle juice or chopped pickles before serving.
Try adding diced bell pepper or spinach for a veggie boost. Swap ground beef for turkey for a lighter version. Reheats and freezes well.
