Roasted sausage and sweet potatoes tossed in a sticky honey garlic sauce — a perfect mix of sweet, savory, and crispy, all made on one pan.

Ingredients

  • 2 large sweet potatoes, peeled and cubed

  • 1216 oz pre-cooked sausage, sliced into rounds

  • ½ red onion (optional), sliced

  • 2 tbsp olive oil

  • Salt and pepper to taste

Honey Garlic Sauce:

  • ¼ cup honey

  • 2 tbsp olive oil or butter

  • 3 garlic cloves, minced

  • 1 tbsp Dijon mustard

  • 1 tbsp apple cider vinegar

  • Red pepper flakes (optional)

Instructions

  • Preheat oven to 425°F. Toss sweet potatoes and onion with olive oil, salt, and pepper. Roast for 15 minutes.

  • Add sausage to pan. Toss and roast another 15–20 minutes until golden.

  • In a saucepan, combine sauce ingredients. Simmer until slightly thickened.

  • Drizzle sauce over hot roasted ingredients and toss to coat.

  • Garnish with herbs and serve warm.

Notes

  • Use maple syrup instead of honey if desired.

  • Add other veggies like brussels sprouts or carrots.

  • Reheats well — perfect for meal prep.
