Roasted sausage and sweet potatoes tossed in a sticky honey garlic sauce — a perfect mix of sweet, savory, and crispy, all made on one pan.
2 large sweet potatoes, peeled and cubed
12–16 oz pre-cooked sausage, sliced into rounds
½ red onion (optional), sliced
2 tbsp olive oil
Salt and pepper to taste
Honey Garlic Sauce:
¼ cup honey
2 tbsp olive oil or butter
3 garlic cloves, minced
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
Red pepper flakes (optional)
Preheat oven to 425°F. Toss sweet potatoes and onion with olive oil, salt, and pepper. Roast for 15 minutes.
Add sausage to pan. Toss and roast another 15–20 minutes until golden.
In a saucepan, combine sauce ingredients. Simmer until slightly thickened.
Drizzle sauce over hot roasted ingredients and toss to coat.
Garnish with herbs and serve warm.
Use maple syrup instead of honey if desired.
Add other veggies like brussels sprouts or carrots.
Reheats well — perfect for meal prep.
